My entry for Lasang Pinoy 15 : Recycled Reloaded. It's my first to participate in an event such as this since I'm quite a newbie when it comes to blogging...Enjoy!
Having lived in the province during my primary years, I grew up very much exposed to the tradition of fiesta. During the last week of June we celebrate the annual town fiesta in Tacloban City, Leyte. We celebrate the feast of our patron saint - Senor Sto. Nino. Pintados Festival is one of the must see - where people parade through the town with colorful body paint to recall the ancient warrior tradition where tattoos represented bravery and prestige. Fiesta is synonymous to lavish extravagance of food. No fiesta would be complete without Lechon Baboy as one of the "handa". The following day, my mother would always cook the left over lechon into Lechon Paksiw. A recycled dish nobody would complain about. From something simple tasting to a more flavorful dish with savory sauce to accompany it.
Now living in a different country, I don't get to enjoy lechon anymore but I try to improvise by making Lechon Kawali ( doubling the amount we usually consume ) so I could make the left-overs into another delicious dish.
Lechon Paksiw
1/2 kg left over lechon or Lechon Kawali
1 cup lechon sauce
1 and 1/2 cup water
1 and 1/2 tbsp vinegar
1 tsp peppercorns
2 pcs laurel leaf
1/2 tsp dried oregano
1 tbsp sugar
1 tbsp crushed garlic
1 pork cubes or chicken cube
- 1. Cut lechon into cubes.
- 2. In a pot combine all the ingredients. Let simmer over low fire for 40-50 minutes or until lechon skin is tender. ( Do not mix for the first few minutes )

Wonderful post! I was just dreaming of lechon paksiw because there was a fiesta at another barrio a few days ago.
Did you ever hear them say the best thing about having lechon is that you get lechon paksiw the day after? Hehehe!
