
This month Peabody is hosting the challenge and she has chosen Strawberry Mirror Cake. The first time I learned that this was July's challenge, I was really excited. I have wanted to do this early this month but I have to postpone it until the third week since I wanted to get hold of good strawberries. I used quite a lot of strawberries for this recipe and frankly it was a bit pricey for me nevertheless I have this intuition that this cake would really be great so I went ahead with the challenge.

I made the right decision in making the cake because it turned out super delicious. I have to admit I was hesitant at first to make one whole recipe since I know for a fact that my hubby and eldest son doesn't like anything with strawberries. I was worried that my youngest son and I would end up eating all the cake but to my surprise my picky hubby and eldest son loved it as well. It was heartwarming to receive complements from them.

I really had no problem with the whole recipe because it was easy to make although it was time consuming but nevertheless worth embarking. I baked the cake using a heart shape springform pan since my oven couldn't accommodate an 11x17 jelly roll pan.
This cake is made of layers of sponge cake filled with Strawberry Bavarian cream topped with strawberry mirror. I couldn't find enough words to describe the taste of the cake but one thing for sure this is one of the best cake I've made so far. I'm really impressed. I would be more than willing to make this cake again and again for my family and friends although next time I think I would like to experiment using mangoes.

I decorated the cake using some sliced strawberries and and a few piping's of whipped cream. Actually, even without the decorations the cake is simply lovely

Since I used a smaller pan than what was required there were some left-overs which I made into mini-cakes. This time I covered it with choco-strawberry flakes. My youngest son who really loves strawberries couldn't get enough of this cake.

My gosh your cake is just gorgeous, and I really like how you put strawberries on the sides, what a great idea, which I am definitely stealing if I make it with strawberries again... ;-) but I see that like me you are thinking of making it with mangoes, which I think is a fabulous idea!
