Enough

I've always been a peace loving person. I'm not one who would think ill of anyone. Rather I always want to believe that there is something good about each person.

I've always believed in compromise but there is also a time when there is a need to say "NO" ...


Pineapple Tarts


I spent my afternoon today making these delicious pineapple tarts. I needed something to distract myself from something thats really bothering me. It took me hours just to make these tarts and inspite of that I feel I didn't do a neat job in covering the pineapple filling. The dough was so sticky and soft but it was worth the trouble because they came out really good. It's the best pineapple tart recipe I've tried so far. You can find the recipe in Wendy's blog :)

These pineapple tarts are to be given to my husband's friends. I hope they'll like it.

I did another double batch this afternoon and may I ask, did you let the dough sit before handling it? The longer it sat, the less sticky it becomes.
Your hands must remain clean from jam so that wrapping is a breeze.
If after sitting 30 mins and it's stil sticky to touch, add another Tbsp of flour to it. But not too much, just as long as you can make it non stick.
But I'm really glad you loved it, worth all the effort, right?

Wendy, I chilled the dough first for about 30 mins. During the first 30 mins of handling it was still manageable but after an hour it was already sticky. I think next I'll do add bit more flour as advised. Thank you, we all loved it :)
