
Nasi Goreng Rice
4-5 cups cold cooked long grain rice
2 eggs beaten
1 1/2 tsp sesame oil
2 tbsp minced garlic
200 g raw prawns, shelled and de-veined, then cut into 1/2 inch pieces
1 small onion, minced
1.5 tbsp shrimp paste
1 tbsp light soy sauce
2 tsp dark soy sauce
1/2 cup leftover cooked dry meat ( in my case I used grilled pork shabu-shabu)
salt and pepper to taste
Combine the eggs, sesame oil, salt and pepper, then set aside
Heat the wok on medium high heat then add the olive oil.
Add the garlic,prawns,onion, shrimp paste,salt and pepper. Stir-fry for 2 minutes.
Add the rice and stir fry for about 2-3 minutes until the rice is completely heated through.
Stir in the dark and light soy sauce . Add the left over meat.
Drizzle the egg mixture over the rice and cook, tossing the ingredients in the wok, until the egg sets.
Serve immediately.
