My eldest son will taking his PSLE exams next week and I feel nervous about it... can't seem to make myself concentrate on baking or blogging *sigh*
For now it'll be a simple homey banana cake for everyone :)

Banana Cake with Almond Sesame Topping
Dry Mix:
60 g quinoa flour
120 g all purpose flour
1 tbsp baking powder
1/2 tsp salt
Wet Mix:
110 unsalted butter
85 g dark muscovado sugar
85 g caster sugar
300 g mashed very ripe banana
2 eggs
80 g sour cream
1 tsp vanilla extract
Topping
35 g toasted flakes almonds
25 g muscovado sugar
20 g toasted sesame seeds
30 g all purpose flour
1/4 tsp ground cinnamon
pinch of nutmeg
25 g butter
Combine the almonds, sugar, sesame seeds, flour, cinnamon and nutmeg.Cut the butter until crumbly. Set aside.
Cake:
Position a rack in the center of the oven and preheat the oven to 350 F.Grease the bottom and sides of a 9 inch round pan (in my case I used mini loaf pans ).
Sift together the flours, baking powder and salt into a medium bowl. Whisk to combine, and set aside.
In the bowl of an electric mixer, using the paddle attachment, beat the butter at medium speed until creamy about 1 minute.
Gradually add in the sugar and beat at medium-high speed until well blended, about 3 minutes.
At medium speed, beat in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as necessary.
Add the mashed bananas and vanilla extract and mix at low speed until blended.
Add the sour cream and vanilla and mix until well combined.
Add the flour mixture at low speed until just combined. Remove the bowl from the mixer stand scrape down the sides and stir the batter until uniformly combined. Scrape the batter into the prepared pan and smooth the top with a spatula.
Sprinkle almond sesame topping over the batter.
Bake 50 -60 mins ( if using mini loaf pans bake for 20-35 mins ) or until the cake is golden brown and springs back when lightly touched.

It's nerve racking I know but hang in there. I'm sure your son appreciates everything you're doing for him. I know my time will come soon enough. Love your always healthy and yummy looking bakes.
